- 1 cup dried plums
- 1 teaspoon cinnamon
- 1 cup pitted dates
- pinch sea salt
- 1 cup toasted whole almonds
- 1/2 teaspoon vanilla (optional)
- 1 cup unsweetened coconut
- Optional: ½ cup raw cacao
- 1/2 cup almond butter
Directions
Add all ingredients to a food processor, pulse to combine, the turn on to mix together. Roll into 1/2 inch balls and roll in remaining 1/2 cup coconut. Depending on how dry or sweet your fruits are, you may need to add more or even add a few drops of water to combine. Makes about 2 dozen.
Adjust almond butter and other ingredients to your taste. Add ginger for a little spicy flavor or add some nutmeg to go more Chai flavored. Dried apples are a great mix in too – just get the ones with no added sugar.
