- 2 cups coconut milk (thick canned)
- 8 egg yolks (per two cups coconut milk)
- 1 tsp vanilla (or to taste)
- Honey to taste
- Optional: Chocolate and/or Fruit to Taste
Directions
Blend all ingredients together in a blender. Taste and adjust flavors and sweetness. Freeze in an ice cream maker according to the machine’s instructions.
Or if not using a machine, put the mixture in the freezer. When ready to have ice cream, take it out of the freezer and let soften enough to scoop it out then puree it with a blender just until smooth and eat right away. It will melt to a liquid if left out too long.
