Ingredients:

  • 1 whole chicken
  • 1 butternut squash, cut in little chunks
  • 1 apple, cut in little chunks
  • 2 red peppers, cut in little chunks
  • 1 onion, cut in strips
  • 1/4 cup coconut oil, melted
  • 2 1/2 tsp cumin
  • 1 tsp coriander
  • 1 tsp cinnamon
  • 1 1/2 tsp paprika
  • 1 1/2 tsp salt

Put chicken in the middle of a roasting pan and surround with the cut up fruit and veggies.  In a small bowl, mix the oil and the spices.  Rub half on the chicken and mix the rest with the veggies.  Heat oven to 425 degrees F.  Cook for 30 minutes, toss veggies, cook for another 30-40 minutes until chicken is cooked through.
