• 1 cp brown rice flour
  • 1 tsp xanthan gum
  • 1 cp tapioca flour
  • 3/4 cp coconut milk (the thin type)
  • 3/4 cp honey
  • 1/4 cp beaten eggs
  • 1/2 tsp sea salt
  • 3 Tbs melted coconut oil
  • 1 1/4 tsp baking powder
  • 1 Tbs bourbon vanilla
  • 1 tsp baking soda
  • 1/4 tsp lemon juice

Directions

Preheat oven to 325 degrees F. Put wrappers in cupcake tin. Mix dry ingredients and wet ingredients seperately then mix together but do not over beat. Bake and check after 15 min. Cool on a rack for 2 minutes then take out of tin and cool completely on the rack.
