1 cp brown rice flour
1/2 cp tapioca starch
1 tsp xanthan gum
3/8 cp cocoa powder
1 tsp baking soda
1/4 tsp baking powder
1/8 tsp salt
3/4 cp honey
3/4 cp + 1 Tbs cold water or coffee
1/4 cp melted coconut oil
1 Tbs white vinegar
2 tsp vanilla

Grease one 9″ cake pan and line with parchment paper. Preheat oven to 350. Mix dry and wet ingredients separately and then stir together. Batter may be lumpy. Pour quickly into prepared pan and bake for 25 min or until toothpick comes out clean. Allow to cool in pan for 10 min then take out and cool completely on a rack.
