• 3/4 cup + 1 TB almond flour
  • 1/4 cup coconut flour
  • 1 tsp xantham gum
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 2-4 TBs water

In bowl mix all ingredients with only 2 TBs of the water. Mix until it forms a ball and feels moist. If it feels dry, add water by the teaspoonful. Divide into 8 and roll out between parchment paper until 6 inches in diameter. Heat a griddle on medium or medium low temperature. Cook about 1 minute per side, until it is opaque and has a bit of color.  You can also use a tortilla press to cook.
