For the Cake:

  • 1 very large or 2 small beets, raw and peeled
  • 1 cup honey
  • 2 cups almond flour
  • 3 eggs
  • 1/3 cup cocoa
  • 1 tablespoon vanilla
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda

Preheat oven to 350º. Cut the beet(s) in quarters and place in blender. Add remaining ingredients and blend until smooth. Pour batter in a greased 8×8 baking dish. Bake for 35-40 minutes. Allow to cool before frosting.

For the Frosting:

  • 1/3 cup soft butter
  • 2 tablespoons coconut milk
  • 1/3 cup honey
  • 1/4 tsp lemon juice
  • 1 1/2 teaspoons vanilla

Cream butter and honey until smooth. Add vanilla, coconut milk, and lemon juice and beat until smooth and fluffy. If the frosting is still too thick to your liking, add one more tablespoon coconut milk.
