This recipe makes 2 cups of stuffing.
- 2 cups cooked quinoa
- 1/2 cup butter (1 stick) (or oil of choice)
- 1/2 cup onion, chopped
- 1 cup celery, chopped
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 tsp sage
- 1/4 tsp. thyme
Cook quinoa according to package directions (you can use a rice cooker – using chicken stock instead of water would be tasty also!). In large fry pan, cook onion and celery in butter until onions are translucent. Add cooked quinoa and spices. Mix well.
