Put Into Blender:

  • 6 eggs
  • 2 cups nuts (soaked overnight in water then drain the water before adding to blender)
  • ¾ cup oil (melted butter or ghee or coconut oil or olive oil)
  • heaping ¼ teaspoon salt
  • sweetener (1/8 teaspoon stevia or little bit of honey)
  • Blend until smooth.

In a large bowl: mix 2 tablespoons water with ½ teaspoon baking soda.
In a small bowl: mix 1/3 cup ground flax seed with ¼ cup chia seeds

Add blender contents to the soda/water mixture along with the flax and chia seed mixture and mix with spoon well. Let sit for 10 minutes or longer.

Use an ice cream scoop to make piles of the mixture onto a parchment covered cookie sheet.

Bake at 325 for 20-30 minutes until tops are a little browned.

Cool the pan on a rack for 10 minutes then take off the panini breads and place on a rack until cool. Store in refrigerator. Slice in half horizontally to make two bread slices for sandwiches or toast
