Ingredients:

  • 4/3 cp brown rice flour
  • 2/3 cp tapioca starch
  • 1/2 tsp xanthan gum
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 2 tsp ground ginger
  • 1 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 6 Tbs butter melted
  • 1/3 cp molasses
  • 1/2 cp honey
  • 1 egg
  • 1 tsp vanilla

In medium bowl mix dry ingredients. In large bowl mix butter, molasses and honey. Whisk in egg and vanilla. Add flour mixture. Cover and chill at least 2 hrs, up to 24 hrs. Put rack in upper third of oven and preheat to 325 F. Line 2 cookie sheets with parchment paper. Make 1″ balls and place 2″ apart on sheets. Bake ~10 min, turning halfway through. Let cookies cool slightly on cookie sheet before taking off to cool completely on a rack.

Molasses Cookies
