Ingredients:

  • 1 whole egg
  • 1 cup olive oil or slightly more
  • 1 tablespoon white vinegar or fresh lemon juice
  • ¼ teaspoon dry mustard powder
  • salt and pepper to taste
  • a little honey to taste

Blend in your food processor or blender for a few seconds; egg, lemon juice (or vinegar), mustard, salt, pepper and honey. While the machine is running add the oil in a fine stream. Do not add oil quickly; it should take at least 60 seconds. As mayonnaise thickens, the sound of the machine will deepen.
