• 2 medium firm bananas, sliced
  • 1 Tbsp melted butter (or coconut oil)
  • 2 tsp raw honey
  • ½ tsp lemon juice
  • ¼ cup flaked or shredded coconut (toasted)
  • ¼ cup chopped pecans (toasted)
  • optional: whipped coconut milk cream (the cream portion which will separate out overnight inside the can of full fat coconut milk- see recipe above)

Place the bananas in a greased 1 quart baking dish. Combine the butter or coconut oil, honey and lemon juice; drizzle over the bananas. Bake, uncovered, at 350 degrees F for 10-12 minutes or until heated through. Sprinkle each serving with toasted coconut and pecans; top with the whipped topping.

Honey-Baked Bananas
