• 8 oz. unsweetened chocolate, chopped
  • 1/2 cp honey
  • 2 sticks unsalted butter, room temp
  • 4 Tbs. coconut milk, plus more, if needed
  • 2 tsp. vanilla extract
  • 1/4 tsp. salt

Melt chocolate in double boiler. Beat all other ingredients in a bowl with an electric beater on low for 1 min. Scrape down bowl then beat on medium for 2 min. Add melted chocolate and beat on low for 1 min. If frosting is dry, add 1 tsp at a time until creamy.

Make the marshmallows the night before.
The next day make the cake first.
While cake is cooling, take 1/2 of the marshmallows and put them on a pan lined with parchment paper. Broil on both sides until lightly brown. In bowl beat 1 sticks butter and 1 Tbs honey until smooth then beat in marshmallows.
Make the frosting. Cut the cake to make 2 layers and fill in between with marshmallow mix then frost entire cake.
