Mix well together: 1 cup butter, ½ cup honey
Mix in: 1 egg, 1 TB vanilla, ½ tsp baking powder. In a separate bowl mix: 2 cups nut flour, 1 cup tapioca starch, ¼ tsp baking soda, 3 TB coconut flour
Mix dry ingredients with butter/egg mixture. Shape into a log roll shape.
Wrap in waxed paper and refrigerate for at least 2 hours. Preheat oven to 400 degrees F. Cut 1/8 inch slices from the dough log and bake on ungreased cookie sheet for 5-7 minutes or until browned. Cool and store in freezer or refrigerator.
