• 2 cups dried navy beans or pea beans (cover with water and soak for 48 hours and change the water twice a day) – then cook at a simmer until softened and add water as needed to keep beans covered during this cooking time. Drain the beans.
  • ½ pound sliced salt pork without the rind (or can substitute bacon slices or bacon fat from cooking bacon or add lots more bacon for more protein)
  • 1 medium onion finely chopped and browned in frying pan in coconut oil or bacon grease
  • ¼ cup raw organic honey
  • 3 Tablespoons sulfate-free molasses
  • 1 teaspoon salt
  • ¼ teaspoon dry mustard
  • 1/8 teaspoon black pepper

Directions

  1. Mix honey, molasses, salt , mustard and pepper.
  2. Add beans and browned onions.
  3. Layer beans, salt pork or bacon or bacon grease and molasses mixture.
  4. Add water to cover the beans.
  5. Cover the pot and bake at 300 degrees F for at least 3 ½ hours or until the beans soak up the water. You can uncover the beans for the last ½ of the cooking time but you may need to add water if they start looking too dry. They taste better each day as they sit in the fridge!
