• 1 lb beef cut into bite size or smaller
  • 2 Tbs butter
  • 1 cp coconut milk sour cream
  • 4 oz mushrooms
  • 2 Tbs brown rice flour
  • 1/2 cp chopped onion
  • 1/2 cp beef stock
  • 1 clove garlic
  • 1/4 tsp pepper
  • 2 cp homemade brown rice noodles

Directions

  1. Mix together sour cream, flour, beef stock, and pepper and set aside
  2. In large skillet cook beef in hot butter til desired doneness.
  3. Remove beef and add mushrooms, onion, and garlic. Cook and stir til onions are softened.
  4. Drain off fat, then return beef and vegetables to skillet.
  5. Stir flour mix into skillet and cook and stir til thickened and bubbly then cook 1 min more
